Not-Chicken Salad

1 recipe prepared seitan, cubed (about 3 cups)
1 red bell pepper, diced
1 medium onion, diced
1/4 cup shredded carrot
1 bunch green onion, sliced thinly
1/4 cup non-dairy sour cream
1 teaspoon Dijon mustard
1 teaspoon salt
1 teaspoon pepper

Preparation
Combine all ingredients in bowl. Serve.
Suggestion: Even better if chilled in the fridge for 30 minutes or more.
